Three quick recipe ideas from an earlier website exercise, organized into an easy-to-read collection.
01 · Chicken cheese quesadilla
Ingredients: 1 tortilla, cooked chicken, shredded cheese, and optional salsa, hot sauce, spinach, or leftover vegetables.
- Heat a pan over medium heat.
- Place the tortilla in the pan. Add cheese, cooked chicken, and extras to one half.
- Fold it in half and cook for 2–3 minutes per side until golden and crispy.
- Let it cool briefly, then slice.
Shortcut: Microwave it for about 1–2 minutes if you don’t want to use a pan. It won’t be crispy.
02 · Creamy garlic chicken pasta
Ingredients: Pasta, cooked chicken, 1–2 cloves garlic or garlic powder, butter or olive oil, a splash of milk or spoon of cream cheese, salt, and pepper. Optional: spinach, parmesan, or red pepper flakes.
- Cook the pasta according to the package. Save a little pasta water before draining.
- Heat butter or oil in a pan. Add garlic and cook for about 30 seconds.
- Add the cooked chicken and heat it through.
- Stir in milk or cream cheese and a little pasta water.
- Add the pasta, mix, and season.
Extra: Add spinach, red pepper flakes, or a squeeze of lemon.
03 · Buffalo chicken wrap
Ingredients: A wrap or tortilla, cooked chicken, buffalo sauce, lettuce or spinach, and optional ranch, blue cheese, or shredded cheese.
- Heat the cooked chicken and coat it with buffalo sauce.
- Add greens, chicken, cheese, and dressing to the wrap.
- Roll it tightly. Toast in a pan for 1–2 minutes per side if you want it crisp.
Variation: Add extra chicken or mix plain Greek yogurt with the buffalo sauce.
